Celebrate pancake day in style and fuel your workout with this delicious, healthy, high protein, fruit and yoghurt pancake.
- Egg whites – 3
- Strawberry protein powder – 1 scoop
- Oatbran – 30g
- Coconut oil – 5g
- Strawberries – 115g
- Blueberries – 60g
- Greek yoghurt – 100g
Mix oatbran, protein powder and egg whites thoroughly in a mixing bowl, until there’s no lumps and you have a smooth texture.
Pre heat a small pan with a little coconut oil (1g per pancake approximately) and pour in the pancake mix.
Cook for one minute on both sides and repeat this process until the mix has gone. You should make four pancakes based on the serving sizes above.
Layer each pancake with strawberries, blueberries and yoghurt, finish by dropping some on top and around your plate.
