- Poached eggs – 2
- Ham – 2 slices
- Vine tomatoes – 125g
- Spinach – 25g
- Olive oil – 1 tsp
Method (preparation – 15 minutes)
Firstly, place vine tomotoes on a tray, drizzle with olive oil, sprinkle some mixed herbs on top (optional) and oven cook for 15 minutes on 200 degrees.
Meanwhile, prepare ham and spinach, then poach two eggs in pre-boiled water for a couple of minutes before your tomatoes are cooked.
Place eggs on top of ham, add pepper and enjoy. Simple!
